Elephant head amaranth is considered a flower and an herb, that is ornamental and edible known for its tall, upright, deep reddish-purple flower heads that resemble an elephant's trunk. It is grown for both its ornamental value as a statement plant and for its edible leaves and seeds, which are nutritious and gluten-free. This heirloom variety can be grown from seed indoors or direct-sown, requires full sun, and benefits from well-drained soil. 

Start seeds indoors 4–6 weeks before the last frost date.
Alternatively, direct sow seeds after all risk of frost has passed.
Sow seeds about 1/8 inch deep and space plants 12–24 inches apart.
