Collards will cross pollinate with any member of the Brassica oleracea which includes cauliflower, broccoli, kale, and brussels sprouts. So be sure to separate a great distance. Before gathering seed, you will have to overwinter them. To overwinter, you will want to preserve them by heavy mulching or transplant to pot of sand and store in temps between 35-40 degrees. Once spring arrives and you can repot, harvest and store seeds after they have dried out.
