Caraway

To grow caraway seeds, you can sow them in early spring or fall in a sunny location with well-drained soil. 

Sowing Plant seeds ¼–½ in deep, Space seeds 4–6 in apart, Space rows 12 in apart, Water regularly until plants are established, and Thin seedlings to 6–8 in apart. 

Growing 

  • Keep soil evenly moist until plants are established
  • Control weeds, especially when plants are small
  • Fertilize lightly when seedlings are 3 in tall and again when flowers appear

Harvesting 

  • Harvest the leaves in the first or second years
  • Harvest the seeds when they turn a rich, deep brown color
  • Remove the seed heads as soon as the seeds begin to mature
  • Let the seeds continue to dry indoors
  • Store the seeds in an airtight container

Other tips

  • Caraway is relatively pest and disease-free 
  • In colder climates, mulch the roots of the plant heavily with straw or organic mulch 
  • Caraway plants look a bit like carrot plants
